Hi, I was watching this Keyshot tutorial:

In the tutorial, the user adds an IES light and then drags on the light blue line to extend the length of the light. When I add an IES Light the same way (through EDIT -> ADD LIGHT -> IES LIGHT), I don't have this option.

Is there a setting somewhere that I am missing that I can turn on?

He didn't add an IES light. He added a Spotlight.
