Title: modeling/rendering liquid in a glass

When you build a model of a container for liquid, say a wine glass for example, and you create a model for the liquid, should the liquid be coincident with the inside surface of the container, or do you build in a small, but nonzero gap between the liquid and the container?

I used Jeff McCartney's advanced red wine material to render this wine goblet..........

I don't understand why the top surface of my wine is not wine colored............any suggestions?
