Westmere, Nehalem or Sandy Bridge-E build?

Ok....So I have determined a server build is the way to go.

After watching Brian T. at IDF 2010 and this multi-core rig here, http://www.youtube.com/watch?v=zbokPe4_-mY
....I figured with that kind of server build experience this is the place to find out which server cpu to use for Keyshot.

Which cpu should I go with? I want at least 2 cpus and to be able to throw a gaming or workstation gpu in the build too which to my knowledge should not be a problem with server mobos.
