Keyshot is really cpu intensive, and while it's obvious you're going to be punishing your cpu when rendering it is being pegged out constantly as long as the software is open. Obvious reason would be because it renders on screen in real time and is constantly doing so, is there a way to tone that down or make it so it isn't always killing my cpu?

If you've a a multicore processor, exclude one core of the KeyShot process via task manager.

Or you can set an idle time in seconds in the preferences menu.  Default is 0 seconds, which makes it render forever.  If you set that to 60, if you let your realtime setup sit, it will improve the image for 1 minute, then stop.

... but only if you don't move your mouse ...

My problem with excluding a core from keyshot is that my renders will take longer, won't they? The preferences idea sounds good but not if I move my mouse and it kicks back in lol :(
